Something interesting to note, about me: For some reason, there are things in my store of food that never seem to go bad, even when they should. Tortillas, as long as they're kept in their plastic containers, can sit in my apartment for months and months yet still be good. Refrigerated lemon or lime juice takes *forever* to go bad.

Non-refrigerated keeps this side of forever as well. The British Navy carried wooden barrels of lime juice (to prevent scurvy) and those lasted for many months.

Lemon and lime juice are too acid for most bacteria. And they aren't really friendly to molds either.

Remember, high acidity is why pickles (and other pickled products) stored for long periods before refrigeration.
