a few good dishes

Since we're going to be gone a month, I'm trying to do more cooking rather than eating out.  I'm thinking about taking a ride to the grocery store to make a nice dinner for tonight.  Which brings me to ask, what's everyone's favorite recipes?  I'd love some ideas.
