I'm going vegetarian. I've turned a blind eye long enough to the incredible creulties in the meat industry, and I've decided not to support it anymore. Over the course of the past week (little more than a week, actually) I've drastically cut down my meat intake - by about 90% if I had to hazard a guess. Will I miss meat? No, I don't think so.

It's a lot easier than people think for a vegetarian to get all the essentials in their meals (protein, etc). A lot of people do tofu- I found I didn't really like it. But tempeh is delicious. Any kind of nut is good, though almonds are best because they arn't as high in calories as some other nuts. Also cheese.

Barley is my favorite...its good in soup with mushrooms.
Oh and to illucian's comment: couscous is the beeeesstttt.
Oh that reminds me (sorry if I'm rambling)- be careful not to overdo carbohydrates. I found that when I was veggie, I would do a LOT of pasta, and a lot of bagels/sandwiches/etc to replace the meat. But too much of that can make you feel sluggish and such.

I think I am going to try some couscous too, it sounds nummy.
