Other than St. Francis, does anyone know of a saint, god, or avatar of some kind that deals with animals (in particular, the deaths of little animals)?

According to this site, an old Egpytian god called Andjety "started out as a God of Pets and Farm Animals before being promoted (demoted?) to his present position" as god of rebirth and the underworld.

There are also some references to Saint Anthony (the Great, a.k.a. the Abbot or the Hermit) being the patron saint of domesticated and/or pet animals.

Pan would care. As would Artemis. And the Green Man. And Anpw; He always cares, and there's precedent. Ganesha tends to care about the little ones, and Guan Yin cares about everyone, no matter what level of existence. Persephone might be approachable. There's all the smaller ones, too, especially a lot of those household kami.
That and there's the various gods for whatever sort of animal we're talking about; specialists can't hurt.

Depends on how wide you want to cast your net, but I have no doubt that there are some chaos magicians somewhere who invoke Terry Pratchett's Death of Rats.
