When I make it on my own, the nabe is 80 - 90% veggies. I love it!^^

And wow, that looks great! What kind of veggies do you usually use? I see carrots and.. zucchini, is it? Whatever it is, I bet it tasted super yummy. ^^
I had tofu for the first time this year, I think... and it actually wasn't bad. The texture was a bit strange, though. And hard to explain, too. I kind of want some now. Lol.

As for the veggies, I use nappa, green onions, sweet onions, zucchinis, spinach, carrots, daikon (Japanese raddish) if I have some, ground ginger, shiitake mushrooms, enoki mushrooms, etc. ^^
You know, tofu that's sold here doesn't taste nearly as good as tofu you can get in Japan, so it's better to eat them with something else to give it flavor ^^ (We often eat tofu only with soy sauce and a little bit of ginger in Japan).
But I'm glad you liked it OK. It's very healthy after all. ^_~

I love Nabe. I call it it "guilt-free" eating because all the ingredients are just boiled. Heh heh... =P
I used to eat it with udon but I have since replaced it with noodles made from konnyaku.

I eat a lot of nabe because I know it's healthy and not fattening! I used to eat it with a lot of rice, but since I stopped eating rice, I'm eating even more nabe itself. LOL
Right, we often put udon in the pot at the very end, when the nabe's content's pretty much gone except the soup, and cook them in the soup. It's delicious, isn't it?
I also use noodles made from konnyaku.^^ We call them shirataki.
