don't want to bring you back into the LJ fray, but i'm also considering quitting my job without having another frying pan handy. are you collecting unemployment or anything?

No I'm not, that's the problem with the quitting; you have to be laid off to collect unemployment. The check from all of my accrued vacation days was nice though! I also have the option to do the cobra thing for health insurance. You get 45 days to decide and then it's retroactive. Damn expensive though. I'm still thinking about it.
I'm totally enjoying the unemployed life (despite the sickness). Then again in a few months I might be singing a different tune.

it is actually up to your employer to determine if u get unemployment after quiting. for instance lord negatron quit his job and got unemployment because he convinced his boss to sign something. so u could conceivably get it. of course u can also get it if u quit due to some kind of injustice.

i too am in the same boat as you regarding hating job almost more than enjoying the ability to eat regularly.
