Do a Jewish Ghetto tour- I think there's only one guy who does them and you can pick up the brochure at the tourist information centre. I really enjoyed it when I did it in January.

I would definitely recommend going to the Old Town Square for the Easter Market. There's tents with souvenirs, Easter eggs, beer, sausages and the ambiance is great. http://www.pragueexperience.com/events/easter.asp.
