Great! Do you think it would be okay to just strike up a conversation with someone? I read that they are extremely kind and friendly, but at the same time very shy and I wouldn't want to make anyone feel uncomfortable.. but I do wish to make a friend or two if possible when I'm there.

Asian Chinese, was in Stockholm for a work trip last year and it was amazing. People are extremely friendly and helpful, they speak English to you (without even you requesting them to) etc. They are extremely tolerant to minorities so I don't think you will have a problem there. It is a beautiful city inside out so enjoy yourself.
