I grew up on something similar hailing from my Cameroon days.
And for the vegetarians, the chicken can be traded out for stewed tomatoes without sacrificing the taste much. :)

Yes, that could easily be done like in many of these curries and stew recipes. I'm all for experimentation anyway - a recipe is just a guideline of sorts to me. I'm enjoying learning about spice combinations and such through these recipes.
