And can anyone tell me why the paratroops get dropped with those red smoke bombs at their ankles? Is this some real-world thing, and if so, then doesn't that just make it easier to see them coming in?

I think that's the Rule of Cool in force with the flares and smoke, which would provide obvious problems trying to follow your squadmates, never mind burning your ankle off. Actual low light parajumps use glow sticks IIRC to make sure everyone lands in an organized stick.
