There are a ton of Space Jews in the Star Wars prequels, ranging from Jar-Jar (black stereotype), Watto (Jewish stereotype), the Neimoidians (Asian stereotypes), and there's also Ziro the Hutt in the Clone Wars film, a gay stereotype ^^
No offense, but I think that most of those comparisons are a bit reaching. Especially Ziro -- I see him as a priss, yes, but not as 'gay'.
Besides, Hutts are hermaphrodites like slugs. They can inseminate each other or themselves (there should be more on this on the Star Wars Wiki, Wookieepedia). Human standards of sexuality really don't mean much under those circumstances.

Saying that the defining element of Medieval Europe was anti-semitism is like saying how the defining element of Medieval Islam was sexism. After all, all Muslim women were locked up in harems and tortured if they disobeyed their husband/master, weren't they?
The answer to anyone who has actually studied those cultures is to say, "No, both cultures had problems with sexism and anti-semitism and other things. But they were not defined by them, any more than any human culture can ever be summed up as "Everyone said/did X, no exceptions."
I'm not overly surprise that there are female stormtroopers (TKs) in the Empire. The thing that would make Tarkin frown is the modification on the Stormtrooper armor.
I dunno about Tarkin being bothered. Go and look for 'Natasi Daala' on Wookieepedia to see who his girlfriend was in the SW verse. Heck, she even got to command the fleet that guarded the original Death Star construction site!
