how green is your school currently? because many schools don't even have proper recycling bins for cans, paper, etc. at one college i teach at, i couldn't find a single paper recycling bin (found one for bottles). that's a big start.
obviously recycling bins. also, hosting film screenings for increased knowledge and awareness of environmental issues are lots of fun.
install more racks to lock bicycles to or look into getting donated bikes for students or perhaps a rent a bike system where you can take a bike, lock it up outside a building for while you're in class and another person can use that same bike having rented another key that fits the rent-a-bike locks.
cheaper parking passes for any student who lives on campus but doesn't drive to class.
ecofriendly painting options for any building being remodeled (my campus was always under reconstruction).
My friends and I always thought it would be awesome to set up a work-study rickshaw-bicycle thing on our campus. That way the people who didn't want to walk all the way across campus could just pay $1 or something and someone would bike them there. And the student workers would get tons of exercise. haha I don't know how likely that plan is, though.
