The last time we saw Sandor he is left for dead by Arya because of the brutal battle he and Brienne had. -that never happens in the books by the way-

I think Sandor is the gravedigger on the Quiet Isle and therefore Sandor is not dead. On the show, who knows? He may be off the show for good but I don't think we'll know that until next season at least. Regarding Sandor being the grave digger, there is also another big hint to that being true - his horse, Stranger, is the dangerous horse in the stables at the Quiet Isle who bit the ear off one of the brothers who tried to geld him. Stranger is fiesty and only Sandor could control him. Stranger would not have allowed just anyone to take him to the QI, which requires one to take a very circuitous and hidden path to get there.
