Lemongrass Creamed Rice Serves 4-6
100 g (1/2 C) short-grain rice (like arborio; 3/4 cup works too) 1 litre milk 1 stalk lemongrass, bruised 1/2 C caster sugar (i use honey instead) 1 tsp vanilla 1 guava, sliced 1 papaya, sliced
Rinse the rise in a colander until the water runs clear. Drain well. Place the milk in a saucepan, add the lemongrass, sugar and vanilla and heat until the liquid is about to boil. Add the rice and stir for 1 minute or until the liquid returns to the boil. Reduce the heat and allow to simmer for 1 hour, stirring occasionally or until the rice is tender. Remove and discard the lemongrass. Divide the rice between four bowls and top with the sliced fruit. Serve immediately.
