I have that Artisan Bread book and haven't tried it yet. The trouble with living on your own is that bread baking seems an extravagance when you can't get through a loaf without it going stale (unless you're incredibly gluttonous, which isn't beyond the bounds of possibility). However, I'm interested to read of your success with it, and will try it sometime when I'm going to be entertaining.
That's the good thing about being able to keep this dough in the fridge for a fortnight - you can just pull off enough to make a roll for one. Of course then you're heating the oven very hot for one roll, which might be annoying, but if you need nice bread (dearth of good bakeries here) it's worth it :)

I should find time to go to my Mom's to pick up some red currants and make juice to last me all Winter...

I've never eaten many redcurrents, but like them - I'm sure they'd make a delicious juice!
