Yesterday I really got my chef on. I made not one, but TWO recipes. Both were a first attempt and both turned out fantastic!
For dinner, I made Baked Rotini. The recipe was for Baked Ziti, actually, but Rotini is more fun, and besides, the grocery store doesn't actually HAVE Ziti. I suppose Rigatoni is basically the same thing? Maybe it's a regional thing. Anyway, the recipe was easy, though there were several steps involved. First I cooked some ground beef and dried minced onion (the recipe called for a fresh chopped onion, but I'm not too crazy about onions, and already had the dried stuff, so I figured it would be fine. After that was browned, I drowned it pasta sauce (Traditional Ragu is my favorite) and once the sauce was heated I set that pan aside. Cooked the pasta. Then assembled pasta, meat sauce, sour cream, provolone, mozzarella, and parmesan, and stuck it in the oven for 30 minutes. Everything was already cooked, so the only thing it had to do in there was get all hot and melty inside. It was DELICIOUS and pretty filling. It made so much, we'll have leftovers for a couple of days.
I also made my first Snickerdoodles. I had been led to believe they were somewhat complicated to make, but once I actually looked up the recipe for myself, it didn't look so hard. Just a few more steps than other cookie recipes, perhaps. I made them in two sessions. First I mixed up the dough, and then refrigerated the bowl while I made dinner. After dinner, when the dough was cold and a bit easier to work with, I set out rolling it into balls, coating them in cinnamon and sugar, and baking a dozen at a time. It was supposed to make 4 dozen, but again, I ended up with about 3 dozen+4. I can't say if these are the best Snickerdoodles I've ever had, and I'm not sure I got the texture right, but they smell and taste perfect! I'm proud of them.
Finally, here are some
