It's weird - I have written Mick/Beth a lot, and I have gotten rather positive feedback about it, but it's still not real for me. Oh- Mick thinks it's real, though. But when I write Mick/Beth for him, it's his POV. I don't see it either. Beth's a complicated character, confused (and confusing) - in the end, she's prejudiced, unfaithful, distrustful, and unwilling to change. What does he want with her? Their relationship is creepy in the way you describe, and it's only going to hurt Mick to keep it up. But then he does have a tendency for picking the wrong women ;)
That said, canon gives us plenty to work with, so it's not impossible to write. Just angsty ;) I understand why you don't like it though- Mick/Josef is just much, much better. Because I like dark stuff, my fave fics involve Beth hurting Mick (intentionally or not, or Mick hurting himself for her) and Josef watching it happen and trying to make it better (in the darkest ones, he fails and there's angst all around- happy joy ;) )
