I wonder if part of it is that when we were kids we had a lot more time to think about these things.

I'm sure that's part of the equation, bu there is evidence that neuro-activity tends to decrease with age. Also, children frequently don't bother spending time worrying about issues like plot holes and non sequitors which would doom most "grown-up" stories, so the quality of the stories may not be as good when we dream them up in our youth...
