Last night I threw together a few things on the fly to make soup. I had this package of already-grilled chicken breast strips from Costco that I needed to use up, and of course I thawed them and then didn't feel like using them in anything until nearly too late ( Read more... )

I'm definitely on the mend. Back to the doctor on Monday, I hope for the last time for this.

Time to start working on finishing up school work now. Ugh.

It was very savory and satisfying, but would be better with different chicken, probably, bought especially to prepare for soup.

That sounds terrific. Ingredients-wise, it reminds me of a recipe for vegetarian enchiladas I ran across years ago that uses green olives instead of meat. Being an omnivore, I usually add chicken. (-: There's something about the chicken-olives-mushrooms combination that's just extra yummy, IMO.

I love that combination a lot and it works well with bay and thyme. I love to cook with olives anyway. I make a mean picadillo.
