Cooking Woes

Tonight was a bit of a failure. Menu mailer called for a rice casserole, and the rice didn't get cooked; it was all crunchy. I think I'm doing something fundamentally wrong, because this happens a lot when I cook rice things in a casserole. Maybe I should start using cooked rice even if the recipe doesn't call for it.
