Given that it's an abbreviation for "electronic mail", the correct way is "e-mail". However, email works if you're not fussy.

I prefer e-mail, but if I'm lazy and/or in a hurry, I probably write email.

I've gotten lazy and defaulted to "email." It could go either way for me, I guess, though, depending on how anal I want to be.

Here's one for you: Do you capitalize "Internet"? I do, because it is a proper noun.

Yup, I'm getting slushy on e-mail/email, but I still capitalize "Internet." I see it uncapitalized sometimes online and in the press, and no me gusta. Just seems wrong.
