I can't answer your questions about the straps, but... Someone on another thread shared this link of the colors/materials that Antaina keeps in their warehouse:

I believe it's possible to request shoes that are made with any of the materials on that page (and it appears that there's a sax color in the first row of options). I don't know myself if this works since I just put in my first Antaina request this week--they haven't responded because there's a national holiday in China right now and most businesses won't open again until Monday.

I can only comment for real tea parties (Angelic Pretty) and Secret Shop (which I would by the way suggest over the ones you're considering...they're much prettier and look exactly like the real thing), the 2 straps on the shoes criss-cross and secure your foot in the shoe. The ankle strap is optional and mostly for show (but the shoes are pretty ugly without them).

I prefer the Secret Shop ones to the AnTaiNa ones, personally. The Secret Shop ones seem more sturdy. But the AnTaiNa ones aren't bad.
The ankle strap is mostly just for show. I've noticed that when I wear them for a long time, like all day or 2 days in a row, that my feet hurt. I think it restricts the natural movement of my ankles a little bit. But this only happens at cons when I only wear that style shoe all the time. And when I take out the ankle strap it feels much better.
That's not a problem, but I just wanted to add that since most people will say that the ankle strap doesn't do anything. It does something to me, but that might just be my feet.

I might have slimmer ankles then what they expect, but in the past when I've tried on both AP and off-brand tea-parties, the ankle straps are very loose and do not stay up. I think they are just for show.
