I have a recipe that turns out adequate to sublime crusts. But it seems to vary a lot each time I make it in terms of how long it takes to come together, which of course determines the texture of the final product to some extent.
I'd like to be able to make it come together quickly and easily every time, like they do on the Food Network.
Maybe I will try this recipe. I've only ever used butter for pie crust, never lard or shortening.

One cup of lard (or shortening)
Two cups of flour
1/4 tsp baking powder
1/4 tsp salt
Cut lard into dry ingredients. Add:
1 beaten egg plus enough liquid to make a half-cup, total. Can be cold water, apple or orange juice, milk, cream, whatever.
Mix together until it feels nice. Honest. That's all there is to it.
I think (haven't made it in awhile) this makes four single crusts.
