I'm a southern belle!
Because I made a lovely gumbo! With the help of an original recipe given by aurorasinistra . I was out of thyme and rosemary - incredible - but that did not ruin the taste. Went generously with the tabasco ... and making ersatz Worchester sauce from anchovies, balsamic and garlic was great addition! And I did make the roux without cheating - though had I gone by
