A Lazy-day recipe: Soup

Though it's too hot to really make up a soup--a big soup--the changing light is making me hungry for fall/winter foods.  Today I gave in to the urge and assembled a quickie-soup from frozen beef stock, rice, and canned stuff, plus a spare few sausages.

The base: 1 quart frozen beef stock (needed using up anyway.)    Plus maybe 2 cups of water.  To ( Read more... )

And lots left over for tomorrow.

But it needs to get cold enough for me to set up for making stock through the winter.

Day two...this was a large batch, for us, and we enjoyed but didn't eat a lot. So on day two, with long, tall, greyhound-build son home from the city for the weekend, I sliced up the rest of the sausages in that package and a half pound of button mushrooms, sauteed them, and added them to the leftovers. Hungry son put down several bowls of it and that left perhaps a pint for a leftover meal for someone later on. The added sausage and mushrooms made it a much richer dish, of course.

Soup sounds wonderful! Did you start with cooked or uncooked rice?
