Like many people, I crave chocolate. Which is OK except for the part where I can't eat sugarized chocolate. I've also found most of the recipes online for chocolate items to be either uninspiring or too high in carbs. So I found a real choclate pud recipe and modified it to suit

Guar gum (as a sub for cornstarch) is pretty nifty. It's a vegetable starch instead of a grass starch (i.e., corn or wheat) and has no carbs. It doesn't need much heat to thicken so it works faster and it works out to about 1/4 tsp to tsp of cornstarch. Pretty impressive stuff.
