I like to marinate extra firm tofu cubes and bake them. Vivian likes them because we get to use our chopsticks to build towers with our lunch. (And fine motor skill practice! Win ( ... )

I also have a lot of trouble with tofu. Re: meatless meals, I often toss seiten with broccoli/bok choy/etc. for easy stirfry. They taste very convincingly like strips of beef.
