It took about 10 minutes of steady egg-beating to get to the stiff-peak stage, and THEN after that, about 5 minutes of slowly adding sugar, vanilla, vinegar, and cornstarch and THEN 10 minutes of steady beating to get it into the thick marshmallowy state. It's a long process but worth it ( ... )
