The trick is after the ten minutes with the lid are up, you drain the water and add ice water, soak for a minute, then drain and add more ice water. But now you have a new gadget and don't need to know.
Best method ever. I destroyed innocent eggs for years until I found out about ice. After cool water I just put them in a bowl with ice and shove in the fridge. Works every time.

I'm not saying bad eggs, just not fresh from the grocery store. Keep a stock of eggs that you rotate through.
Eggs allow air in through the shell as they age. The added air, makes them easy to peel.
I'm sure that's what the piercing does also, but just a little tidbit of randomly acquired egg knowledge for you.

I had actually heard the thing about not using fresh eggs (the ones I used were a week old).
I will have to experiment with super fresh eggs to see if there is a difference in the new doodad.
I loves my gadgets...seriously. Give me a gadget and I am ALL over it.
