Wow! I would be, too! Hat's off to you for persevering to that late dinner. Kudos to the kids, too. I'll bet they were tired, too.
Love the apron! And your treatment of the turkeys is similar to ours, i.e., filling the cavity with lemon and herbs, but this year, with the spatch-cocked turkey, we didn't have a cavity! Herbed butter went under the skin though. Mr. P is in the process of making turkey enchiladas for dinner tonight.
Yeah, spatchcocking does take away a place to put things!
But herbed butter is great! I clip my herbs from their pots by the kitchen steps with my kitchen scissors, rinse them off and dry them in a rolled paper towel. Then I coarsely snip them into a small condiment bowl, and mince them fine with the tips of the scissors. I think my kitchen scissors are my most used utensil.
Turkey enchiladas sound nice. It's turkey noodle soup for us at supper tonight--after a lovely lunch of leftovers. And I will take some of the cranberry sauce and chuck it in the blender with mayonnaise to make a spread for turkey sandwiches this weekend.
I must say that you are absolutely amazing, sweetie. (And that apron rocks.) :) So proud of you, but not at all surprised that you managed. But I know how such things can wipe the floor with one...so you have my sympathies & wishes for a weekend of REST!

It was definitely one of my stranger Thanksgiving Days, LOL!
But I suppose I shouldn't complain, listening to some of my customers today: I asked them about their holidays, and of course, most said they'd had a nice day--then I asked were they hosts or guests. Some people hosted a ton of people! One older lady had nearly 60--all children, grandchildren, spouses and great-grandchildren. Another had nearly 30! One lady spent hers in the hospital where her husband was: he'd had a heart attack. Several people have not yet had their holiday--they are waiting to have it when more people are able to work it into their schedules.
