Yes, I think they would. The shopkeepers would be acting from a couple of motives--first of all, sheer gratitude that the hobbits had saved the city, and second of all, the knowledge that being patronized by the famous war heroes would be very good for business!
I love Gimli! I'm glad you liked him in this--I wanted to show him having a sense of humor without being the butt of the jokes!
This story was *so* much fun to write, as I figured out the various gifts and how they came by them. And of course, poor Gimli, a Dwarf, having to *make* the shopkeepers take the money, LOL!
I can definitely see the shopkeepers thinking that the added business alone will make up for any lost revenue - but I can equally see the hobbits really wanting to pay.
Yes. While the actual term "celebrity endorsement" may not have existed, I daresay the *concept* did! But it's not something the hobbits would have understood. And knowing how hobbits feel about gifts, I'm very sure they would have insisted on paying for any gifts they were bringing home.

What a charming story. I loved the problems the hobbits had with letting the merchants give them gifts - luckily Gimli can handle all that.

Yes, I really do think the people of Minas Tirith would have gone overboard to show their gratitude--but not necessarily in a way that the hobbits would have been comfortable with! Gimli was quite useful, wasn't he?
I like to imagine that by the time the Quest ended, the members of the Fellowship thought of themselves as a family, and Legolas and Gimli would have felt very protective of their hobbits!
