Getting "boil the drinking water" into Leviticus would have prevented a lot of disease.

Putting in something like "God created the universe and saw that it was good, and you can appreciate more of the goodness if you observe carefully, measure, check, and share the information" might have kickstarted science, though I admit you take your chances with trying to convey anything sophisticated in a holy text.

Killing Karl Marx fairly early might have been a good idea, but I don't know whether there were other people with similar ideas.
