How picky are the respective hotels about how many ppl in a room? We have 4 scheduled in our quad room, but I don't object to letting someone use floorspace if they're quiet and I don't get kicked out over it.

They aren't. (Assuming you don't set fire to anything, aren't excessively loud to the point where neighbors call the front desk and complain, and don't call down to the front desk to say "we have eight people here and only four towels.")

First year I stayed on site, we had six people in a one-king-bed room at the Hyatt...three in the bed, and three in air mattresses on the floor.

I am the moderator for a room-share of mostly-staffers. Details are as such:

Hyatt Thurs-Mon
low-level
non-smoking
quiet
child-friendly
price descending from $175 (equal split, minimum price per person $117)
Available space is one bed (two shares) and one floor/rollaway (one share)

Well, I was going to offer 100, but if 17 more can get me a rollaway, that would be cool.

I'll have to check with my friend from Jacksonville to see if he can afford the higher rate.
