Well, it is done. I have decanted and sweetened the cordials for this weekend's class. I have to admit that the flavors are interesting. The last time I made cordials, I used white brandy as a base, and varied the flavoring with sugar or with honey as I deemed appropriate. I bet the white brandy ones will be heavenly. I still get the giggles over Everclear cordials. There is just something so . . .trailer park about it:)

You'd be surprised at how many brewing entries use Everclear as a base. A number of published recipes call for 190-proof alcohol, and Evil-clear meets the criteria. I nibbled a slice of apple that I extracted from the Everclear jar. Bleargh. I should have tried to see if I could light it on fire instead.
