Mushroom soup recipe

Take two onions and a bag of mushrooms (25 normal sized mushrooms or something). I also used three potatoes to bulk it out. Finely chop all the veggies ( Read more... )

Stupid question, yes, but I'm guessing a veggie stock, not, say, a chicken stock for your soup?

Mind you, I think a chicken stock would be nice...

Chicken stock actually, as that's what I had in the house. I'm sure vegetable would work, but it probably doesn't need stock at all actually, I might try that next time.

I've seen liquid mushroom stock around in Australia, which could be interesting too.

Ah, for some reason I thought it was a vege soup. Duh. Although I'm not sure a mushroom stock on mushrooms would work. I'm sceptical, but let me know how it goes if you give it a bash :)

As a side note, I was talking to someone about mushroom soup and they reckon pine seeds are a winner. I'm not sold...

Mushroom stock would be awesome in a risotto.

I have no access to it here anyway, so the point is moot :)

I am also not sold on pine nuts. Maybe toasted, and sprinkled on top after serving . . .

Thought you might like to know that your mushroom soup recipe starred in a "Princess Taylor" bedtime story last night. She thought it was fantastic and given she hates mushrooms, I found it rather amusing.
