Rory watched over Amy because he loved her, and it doesn’t appear becoming the Centurion changed who Rory essentially was, but helped define the character for the audience. Rory was given the choice of traveling with the Doctor. He refused without regret. That is something, that in the DW universe, only Rory Williams would choose

I don't think we get to see a lot of obvious results, but the scenes in S6 and S7 where people Rory cares about are threatened provoke more directed aggression rather than flailing attempts at defense like we saw in S5. Rory trying to protect Amy in "The Vampires of Venice" was cute. Rory trying to protect Amy in "The Wedding of River Song" was hardcore.
