Yes, I like the idea of Craig Roberts. I've only seen him in Young Dracula and Being Human, but I liked what he did. I think he could make a good companion. :D

Iwan Rheon and Mark Sheppard are instant favorites. But I can't see Moffat bringing in Mark full-time. The most we can probably hope for is another reappearance (Moff would be a fool not to at least go that route). Someone recommended Richard Madden in the comments of your other list. I would flip a table from happiness.

I think Amy/Rory could exit in 7x06 and maybe 7x07/2012 Christmas special will debut the new companion. I get the excitement bit. A new companion is exciting.
Only for one episode, but I want Canton and his totally-fiance to show up. And at the end the Doctor takes them to the future/space and they get married. Because. (And then we get women again, because it wouldn't be DW otherwise. I'm not sure how serious that last statement is.)

I think Russell Tovey is more likely to play 12 than be the next companion, especially if Toby Whithouse showruns Who after Moff leaves.
