There are a lot of GiTF stories because the episode inspired conflicted emotions in many fans (especially Doctor/Rose shippers), plus the plot holes, character inconsistency, and potential for emotional turmoil make for great fan fiction material. I will try to add all of the ones I've read/know about but I will inevitably miss some good ones, so if anyone else wants to add to this list, please feel free to do so! (this is more of a comprehensive list than a rec list...but I do recommend many of them)

Consequences of Trust Broken, Fayth After GITF Mickey has a few things to say to the Doctor. I Need You, Fayth (9 and 10 - not necessarily a GiTF story but it still fits) Ten has screwed up, and for once the whole of space and time may not be enough to make her stay
Companion Sense, Gillian Taylor (part of the Sense series) He still had no clue about women.
The Fireplace is Empty, Tungsten Monk He had to go through the mirror, and it wasn't just for Madame de Pompadour.
The Girl in the Stalking Spaceship, newdrwhofan (also part of a series) Non Reinette-bashing, non Doctor/Reinette romance, eventually a bit of Doctor/Rose romance.
Better Man, sinecure The Doctor finds out the effects his actions have had on Rose.
Why We Fight, jessalrynn In the middle of the whole fiasco with Madame de Pompadour, they stop and have a small domestic. Everywhere, earlgreytea68 (part of the Chaosverse) I admit that I've never minded GitF, this is my bid for its justification.
Turning and Returning, heather916 Prior to the events of the episode, the Doctor asked Rose for "more" in their relationship, but Rose was reluctant and said no. During the events of GitF, the Doctor goes off thinking Rose doesn’t want him.
Turning Tables, callistawolf The Doctor has a chance to show Reinette the stars, but at what cost? Rose is at a crossroads and must decide which path to take to lead herself to a better life.
Standing Still in a Kaleidoscope, jessicaqueen Rose and Mickey have to learn to stand on their own on a spaceship in the 51st century when the Doctor doesn’t return to save them.
