One thing i noticed when i travel to other parts of the country is that when you go out for Asian food, the people in the restaurants tend to be multi-cultural. In NYC Latinos are in everyone's kitchen, even if they're not running the place. It's not 100%, but it's way more than what they've got covered in Boston, from your comment here. I'm wondering about the Korean restaurants on 32nd St in NYC (http://nymag.com/srch?t=restaurant&N=265+1344+1177&No=0). It's nearly impossible to know who's behind the closed doors of a kitchen, but possibly those are all Korean. I've never even see a Latino busser in my fave there.

over here the chinese restaurants will be ran by chinese, and thai... you only really get multi cultural in mcdonalds over here. in the fast food industry you are lucky to get an irish person. most employees are eastern european with bad english, or asian.
