I think a lot of people use season 4 human!Cas as an example when they write him as human, which is fine in some situations but I think most of his frustration came from being powerless in the middle of the apocalypse. I like to think that after all is said and done, he wouldn't mind being human and just hanging out with Sam and Dean.
