So I feel good about everything I accomplished this weekend. Just getting all of the clothes done and (mostly) put away is always a big feat and I'm happy to have it (almost) done with. Still need to wash a big load of jeans tonight and to hang up and put away the clothes that are in the dryer right now, but at least there's nothing sitting in the ( Read more... )

In a food processor, combine 1 egg, 1/2 an onion, 1 cup of flour, 4 large potatoes (washed and quartered) and salt & pepper to taste. Pulse until the mixture is the consistancy you desire.

Into a large pan over medium heat with about 1/2 an inch of heated oil in it, place tablespoon full amounts of the potato mixture about a half an inch apart. Cook side one until golden brown then gently flip. Cook side two until golden brown. Remove from oil and drain on paper towels.

You can also grate the potatoes and onion then stir flour, egg, salt and pepper into them. Then cook the same way.

I was raised in the Judaic faith so latkes are a food staple. lol.

Plus the recipe is really easy. I don't know why 'chefs' try to make it so darn complicated.

I was watching Food Network the other night and the chef added freshly grated cheese to the mixture which sounds pretty yummy too.

Potato pancakes that can be served with just about any meal. Some people treat them sweet and eat them with apple sauce, but I like mine plain with a little bit of sour cream.

Ah-ha! I've confered with the Mamma Strickland and indeed I have had these potato latkes. My grandmother maked them but added onions to 'em.
