I love pork, even the word "pork" has a special ring to it. It was always the favourite meat of choice for the slavic side of the family. However, I noticed on your uncooked roast that the layer of fat on the top of the roast seemed closely trimmed. Was this your choice, or did the place that you purchased it just package it that way?
I long for the family run, neighborhood, corner (maybe ethnic) butcher shops I had as a kid. Here in SF if I want any pork that isn't over trimmed, I have to go to the Mission to the Mexican Meat stores. The local chain store (Safeway) doesn't carry, and you cannot special order, untrimmed meats. *sigh with memories of the good old days*

The whole thing was sort of a joke. My friend from Seattle (a much better cook than me) was in town. The pic is from the Summer. It was one of those horrible 100+ days and we popped into a Dominick's (Chicago's version of the Safeway chain, soon to be out of business) about six blocks away from my partners office. We were supposed to pick him up and go out but we were early so we stopped in... whee, nice AC and they have a coffee stand. I don't imbibe, but my friend, is afterall, from Seattle

I lived in Chicago until 1988 when I moved here. Dominick’s, as a local chain was always wonderful. Another favourite was Treasure Island... Greek owned and operated (I am 1/2 Greco-Macedonian) The Jewel Tea company would have been closer to my Safeway... very corporate. Thanks again for the luscious pics.
