Here’s a tutorial on the three ways I’m aware of desaturating a colour image. More methods will be added as I learn them. Each results in a slightly different effect-different tonalities, contrasts, crispness.
I've used all of these pretty much for the reasons you've indicated, though often I'll combine them to get the exact sorts of shading I want. Cause I'm anal like that.
There is one other method that I know of that might perhaps help our tonality troubles. Go to the Channels tab on your layer palette and view each indiviual color channel. You should find one that suits your tonality needs. Then I just select, copy and paste.
I haven't used this method a lot (I just heared about it today) but already it's worked very nicelyfuls.
