I guess I'm in a snacking sort of mood...

Classic Hummus

1 cup cooked chickpeas, drained
2 garlic cloves, chopped
2 Tbsp. tahini
Juice from 1 lemon
1/2 cup extra-virgin olive oil
Salt and freshly ground pepper

mmmmm... i made some hummus earlier today. here's mine:

Yield

Makes 1 1/2 cups (serving size: 2 tablespoons)
Ingredients

* 1 (16-oz.) can garbanzo beans, drained and rinsed
* 1/3 cup olive oil
* 3 tablespoons lemon juice
* 1 teaspoon minced garlic
* 1/2 teaspoon ground cumin
* 1/4 teaspoon ground red pepper
* Salt and pepper to taste
* 1 tablespoon olive oil (optional)
* Garnish: lemon slice

Preparation

Process first 6 ingredients and 2 tablespoons water in a food processor 1 to 2 minutes or until smooth, stopping once to scrape down sides. Add salt and pepper to taste. Transfer to a bowl. Cover and chill 2 hours or up to 3 days. Drizzle with 1 tablespoon olive oil just before serving, if desired. Garnish, if desired.

That sounds like a great recipe. I like the addition of the red pepper- spicy hummus! Yum! :)

it does give it a bit of a bite. i love it. sometimes i'll sprinkle some chopped greek olives and crumbled feta on top.

mmm, I love hummus, but my blender does NOT. I rarely make it because I hate that blender so much. lame.

I have one of those teeny-tiny mini preps, and it's good fot this recipe, without quite as much hassle as a big food processor. Or a temperamental blender. ;)
