Garlic Supper Club: Salad

We've eaten nine heads of garlic so far; it's time to have something that lacks garlic just so our palate can recover.

Arugula & Spinach Salad with Almond Flakes, Mandarin Oranges and Raspberry/Pear Compote

Spinach [1 bag]
Arugula [most of 1 bag]
Almond Flakes [some]
Mandarin Oranges [1 can]

The uncertain ingredient counts are because we made it up on the fly; it's just salad, how hard does it have to be?

The compote, that's a little more difficult. xhollydayx looked at some compote recipes and then more or less made it up completely, so the following is educated guesswork on my part.

2 pears
2 trays raspberries (about 1 cup each)
3-4 T lemon juice
1/2 cup sugar (approx)

1. Remove any stickers from the pears and boil in a small saucepan until tender.
2. Peel and core the pears. Cut into small chunks and return to pot.
3. Add raspberries and sugar.
4. Boil and stir.
5. Reduce heat to low, stir occasionally.
6. Turn off heat once enough water has boiled off to give the desired consistency.

Like I said, I'm not completely sure how she made this, but it was very delicious and worked well with the salad. We put two bowls on the table and served it family style.

Heads of Garlic Used So Far: Nine.
