Quick Hummus Recipe

A recent Facebook post: cynic51 made hommade spinach-garlic hummus, which is quite possibly the tastiest thing to come out of my food processor to date.

Which garnered a request for the recipe from DD. Well, I'm not really sure that calling this a recipe is quite accurate since I made it up as I went along, but here goes.

Spinach-Garlic Hummus

1 can garbanzo beans (chick peas, if you prefer to call them that)
A little bit of baby spinach. I didn't measure this at all. Maybe 2 ounces?
3 cloves of garlic. xhollydayx loves garlic and thought this was the perfect amount. On the other hand, I love garlic and I thought it was a bit much. So adjust for personal taste.
Olive oil. Again, no set amount. I just poured it in until it looked right.
Salt. Very little.
Pepper. More than salt.

[1] Open the garbanzo beans and drain them.
[2] Peel the garlic cloves. I crushed and minced them to make them spread into the garbanzo beans faster when they went into the food processor.
[3] Dump 1/3 can of the garbanzo beans in them and process them for a little bit. They should still be a bit chunky. Add some olive oil and process a bit more.
[4] Dump the rest of the garbanzo beans in and process them some more. Add even more olive oil and process some more.
[5] Add the garlic and process well. Add more olive oil as needed; you don't want it to be too think.
[6] Add the spinach, plus salt & pepper to taste. Continuing processing, adding olive oil as needed to keep it from getting too thick.

When I was done, everything was a pleasant green color that was vaguely reminiscent of guacamole. It had a super strong garlic taste. Serve with pita or crackers.
