Here is the recipe for the second course of the
Supper Club meal we hosted on Saturday. After our
flavor packed first course we were ready for a palate cleanser.
Frozen Berry Salad
1 bag frozen blueberries
1 bag frozen cherries
1 bag frozen strawberries
1 bag frozen raspberries
[1] Dump all the frozen berries into a bowl.
[2] Put in fridge for an hour. The berries will thaw enough that you don't need super powerful jaws to eat them, but they will still be quite cold and crisp.
My mother has made this for years for special holiday dinners. It is cold and tasty. The berries came straight out of the freezer section at Giant Eagle, so this is a really low fuss meal to prepare. If you have the berries in your freezer this is a quick and easy meal to prepare when guests arrive unexpectedly.
One bag of each type berry meant everyone on at the table got to each at much as they wanted. As with the Olive & Anchovy bites, we left the remainders on the table during the remaining courses, and they had been finished by the close of dinner. I noticed many people dropping a berry or two into their Sangria.
Tomorrow: Baked Clams, Sesame Bread Sticks, and some delicious white wine.
