I have had a culinarily productive weekend. For dinner tonight, I tried another recipe from Eating Well magazine, incorporating more of the shrimp I got on sale last week. I have seen epazote in the market and have recipes that call for it, but never used it. Is it terribly strong, or could you substitue something else if it didn't appeal to you?

It's not terribly strong. I think oregano makes a good substitute (it's even a smidge milder than oregano IMO).

It was good, and even better the next day. And given my busy week, coming home to a good hot meal is awesome.
