Liz brings additional escape-artist skills ('twas she who thought to build the signal fire.) And Jack's compulsive flirtatiousness will be easier to deal with if it's divided between two recipients.
Norrington would maintain a minimum level of civilization, contribute brains and a strong back to any survival/escape efforts, and provide additional eye-candy. Also: I'm convinced he and Jack are meant to be strong friends (little though either of 'em suspected it at their first meeting), and being forced to join forces to survive is a classic way of getting guys to realize this.
Absolutlely no Cutler Beckett. He'd probably do everyone else in- making it look like an accident each time- and when we were all dead he'd eat us.

Tia Dalma: She could probably actually summon sea turtles for us. ;D But otherwise having a strong female presence and someone who seems to have profiency with healing and other such things would be good.
Jack: He's obviously clever and has quick thinking capabilities so if we ran into any problems he'd be able to figure something out fast.
As much as I love Beckett I think having him there would hinder our chances of getting rescued by a boat. .__________.;
Anamaria is my first choice. She is a local of the Caribbean and knows the local flora and fauna so having her around would keep me from accidentally eating a poison plant or stumbling across a venomous animal. She is a sailor which means she has the skills to sail once we get off the island in a makeshift boat. She's also not stupid or malicious, so I wouldn't expect a lot of drama from her. She's a natural leader and I would feel secure in listening to her commands knowing that no harm would come to me
