Simplest way to do it would be a round base with two symmetrical curved pieces for the upper body. (Hard to describe, think roughly the outline of the bird in 2D.) The seam would go up over the head (again, following the outline in 2D) with the circular base making it a sort of... oblong-y shape with a flatter bottom.

Like someone said above, the best for round things is a pattern like a beach ball. (but I've seen people use a baseball like pattern)
It's hard and comes out odd the first couple times though, so practice makes perfect.
